The public is urged to practice the following safety rules while preparing and transporting food this holiday season.

  • Cook and prepare food as close as possible to the time of consumption.

  • Food must be transported in insulated containers (chafing pans and sternos, insulated bags, heating cabinets).

  • Keep food hot at or above 140 degrees Fahrenheit or 60 degrees Celsius.

  • Keep food cold at or below 41 degrees Fahrenheit or 60 degrees Celsius. (Use plenty of ice cubes)

Persons are also encouraged to avoid leaving meat and meat products, dairy, poultry and eggs at room temperature.
